Sensory Evaluation Benchmarks

Use your senses to identify premium stock in seconds.

Color Integrity

Premium green cardamom should have a uniform, deep-green hue. Avoid pods that are yellowish-white (bleached by sun) or dull-brown (over-dried or old stock). The color is an indicator of chlorophyll retention and proper curing.

Aroma Profile

Crush a pod between your fingers. The scent should be immediate, pungent, and citrusy-sweet. If the aroma is faint or "dusty," the essential oils have likely evaporated due to poor storage.

Seed Density

Open the pod. Premium cardamom has dark brown to black seeds that are sticky with essential oils. White or light-grey seeds indicate immature pods with low flavor profile and weight.

Identifying Common Defects

A high-quality batch should have less than 1% total defects. Watch out for these profit-killing issues:

Splits: Pods that have burst open during curing. These lose aroma quickly and should be graded out of premium batches.
Thrips Marks: Small greyish scratches on the pod skin caused by insects. Purely cosmetic but reduces the market value of "Export Quality" stock.
Empty Pods: Large pods that feel light. These have failed to develop seeds and significantly lower your Liter Weight (L.W.) ROI.

Tips for Bulk Buyers

  • 📦 Check the Bottom: In large bags, check the bottom for "dust" or husks which settle during transit.
  • 🌡️ Temperature Check: Put your hand inside the bag. If it feels warm, the moisture level is too high and microbial activity may have started.
  • 📑 Request a COA: Always ask for a Certificate of Analysis for pesticide residues if buying for international export.
